Delicious, Nutritious Raw Hemp Brownies
Hemp seed is an excellent source of vegan protein (containing all essential amino acids), dietary fiber and essential fatty acids (omega 3 and omega 6). Plus it provides antioxidants, vitamins and minerals. Hemp seeds are credited with providing energy, stabilizing appetite and improving digestion.
Three tablespoons of hemp contains 10 grams of protein, 3 grams of dietary fiber and only 3 grams of carbohydrates. They also contain loads of natural minerals and vitamins including manganese, magnesium, phosphorus, thiamine and zinc, as well as calcium, Vitamin B6, folate and riboflavin.
In addition to being nutritional powerhouses, hemp hearts are naturally gluten-free and considered a raw food.
These easy to make, delicious brownie bites are raw, vegan and gluten-free. They can be stored in your refrigerator or freezer for months. Simply grab them before running out the door in the morning. Their rich chocolaty and mild nutty flavor resembles that of a moist brownie — without any of the guilt.
1 cup hemp seeds
1 cup dates*
1/2 cup cacao powder (or carob)
1/4 cup coconut flour
3 tablespoons raw liquid sweetener
1 teaspoon vanilla
pinch of himalayan salt
*If your using regular dates soak them first in warm water to allow them to soften.
1. Process all ingredients in a food processor until a ball of brownie dough forms. This will take a few minutes. If the dough is too wet add a tbsp more coconut flour and if too dry add another date or two.
2. Press brownie mixture into a small square pan lined with parchment paper and put in the fridge until ready to eat. You can either cut the brownies into small squares or use your favorite cookie cutter to cut out small ‘two bite’ shapes and sprinkle with cacao nibs if desired.
